    This organic farm cheese with firm crust and pressed crust is made from organic pasteurized milk directly from the holsteins herd of the Raymond Alary et fils family farm, where the dairy is also located. Its ripening of more than six months gives it a golden crust, sometimes coppery. Its smooth paste, without opening, offers a bouquet of delicate aromas, cream, hazelnut, wildflower and smoke. This cheese enjoys the company of a light Burgundy red wine or a pinot noir.

    The Minstrel is available at the cheese factory and in specialized grocery stores.
